Saira’s Words of Wisdom…(clink the glass for silence please…)

As Ma Rani and I approach our second year of hosting our supperclub, I thought I would reflect on how we got started and why supperclubs in general still continue to thrive nationally and internationally.

When we hosted our first supperclub back in October 2009 we really didn’t know what to expect or indeed how best to run the evening. All we knew was that Ma and I would plan the menu together, do the food prep and once the evening was underway I would take charge of ‘front of house’ and Ma would continue with the cooking and I would step into the role of ‘su chef’ in the kitchen.  I suppose Ma’s teaching background and my stage management background gave us both good grounding for organisation and people skills and my years of always wanting to help her get ready for her own supper parties meant that I knew how to create a decent looking table as well!

So after many months of talking about how we could do more with our cooking and love of supper parties we thought it might be quite a nice idea to host our own. But how does one even go about starting? I hope in this blog I can let you into a few ideas I had which helped us along the way and now without having to do too much advertising we have a working mailing list and regular guests who keep coming back and we love to cook for them!

Pa Graham handed me a box file during the summer of 2009 full of Ma’s recipes for her book that she started writing back in the early 1980’s when I could just about make a piece of toast. With over 200 recipes there were also letters from publishers saying thanks but no thanks, Madhur Jeffrey has the market on Indian Cuisine and nobody could compete with her. Ma didn’t want to compete she just wanted to share her cooking style with other people. Look at the cookery book market now! So Ma did start hosting supperclubs, but not for long as my brothers came along and full time teaching beckoned. The local papers did some lovely articles about her when she was getting going and only last year the Islington Gazette did a ‘revisit’ to interview both of us (the photographer ended up with a plate of food!) So with supper clubbing a no go Ma catered for other people’s supper parties instead.  With me in toe she continues to do almost 30 years later. So you can see where I came into the picture, having told mum I had gone through the box file there was no excuse and with two of us working together we could give her idea of the supper party another go.

First things first, I found Ms Marmite Lover’s website ‘Fans of the Underground Restaurant’ which helped us immensely in finding a platform for our supperclub. Ms Marmite herself has been extremely supportive and even came to one of our first supperclubs and did a lovely write up of the evening.  For free you can register yourself and your supperclub on her website, and using your own page write regular blogs, post photos and add your events. The website has almost 3,000 members and is growing daily. Do also have a look at her book which is a great homage to the supperclub and gives you lots of recipes and advice on how to start your own.

I then set up this blog. Having no background in writing (I don’t think A’level English counts even if I spent my entire two years writing literary essays!) the first few blog posts are  little random –as you will see in the archive pages. I wanted to give the website a bit of a kick start so I was writing anything and everything about food and our cooking.  Having not been particularly savvy with various computer programs I navigated my way around creating a look for our blog page and adding different applications which we have on the site today. There are plenty of companies who offer free websites, wordpress being one of them and is so easy to set up! Ma and I love blogging now and we really do write about anything and everything! It is a great way for people to read about what you do and we always try to include lots of photos of every supperclub, including a write up of the evening. I always take photos – one tip though, do let guests know, usually they don’t mind but some people don’t want to be snapped which is completely understandable. Sometimes guests take their own photos which is great!

Social networking sites have been a good platform too, we have a facebook page and a facebook group that I update regularly and we have a good following. Twitter is brilliant as well, although it took me a little longer to get to grips with it. People who follow us have booked via Twitter so you never know where your guests will find out about you. The Food Bloggers Association website run by Julia Parsons is really good as well. Primarily for food bloggers, us supperclub hosts are allowed to post our events and we also have a page on the site. Finally word of mouth has served us the most to which we are extremely grateful for guests suggesting us to family and friends as an ‘alternative’ Saturday evening out.

So why are supperclubs still appealing to people? From talking to our own guests and having been to different supperclubs ourselves it is really about a unique way of trying food from all over the world. We have such a diverse community in the UK that one can be very lucky in being able to try authentic Vietnamese family recipes one night, Italian another, Spanish, Ethiopian, Indian, French…the list goes on. If you love your food and for good measure enjoy supper parties and meeting new people then supper clubbing if most definitely for you. If like us, you had thought about starting your own then I say what are you waiting for! Give it a go! There are so many of us who want to try your fabulous cooking. It is hard work and does take a lot of planning but is well worth it.

We don’t have an official finishing time at Joginder’ Supperclub, the record so far as been taxis’ at 3am. Ma and I always sit down once we have finished cooking and serving all the courses. It is a great way to meet the people you have been cooking for and gives Ma a chance to talk more about the food (they get me warbling on for most of the evening!) Even Pa Graham makes an appearance with a glass Calvert in hand.

We are looking forward to next week and coming very soon are our dates for the rest of the year including our birthday supperclub. We look forward to cooking for you and continuing with our ‘little supperclub in good old Tufnell Park’.

A week in the life of Joginder’s Supperclub

Well, firstly we hope everyone reading this hasn’t been too badly affected by the events up and down the UK over the last few days. We shan’t dwell but we certainly did have a few apprehensive days here in London.

We did however, also have a busy week of supperclubbing which we thoroughly enjoyed and hope our guests did too. The table was filled with lovely, lively, friendly people for which we say thank you to everyone for two great evenings!

Over the space of two weekends we created and served some of our popular dishes and new creations. We used Fenugreek leaves for the first time to create our Aloo Methi, a potato dish…..

We had a very international feel as well. Guests who were travelling around the UK and Europe had come as far as Boston and Las Vegas, USA. Obviously not just to be part of Joginder’s Supperclub but they had looked us up before setting off, so it is really nice to think that our food is enticing people from across the big pond! Conversations about scuba diving, paramedic training, cooking, theatre, television production, food blogging and photography engulfed the table all evening. It was another one where I did my best not to interrupt by trying to lean across the table discreetly to pick bowls and plates up – now I’ve got to go back and read that phrase…how can anyone, least of all me lean across a table without being noticed??? Well you know what I mean….

Anyway back to the food……

I had to take a moment to say thank you to my boyfriend’s dad Dennis, who has his own very impressive vegetable plot somewhere in the countryside in the lovely county of Essex. He always gives us fresh produce to use from beetroot to rhubarb to courgette. Take a look at the picture below which could quite honestly be in the running for a rosette as this years biggest courgette – put it this way it made enough to fill five dishes in one sitting!

This October sees our two year anniversary of Joginder’s Supperclub. We will be hosting an anniversary supperclub. The menu will be really special with some old favourites (let us know what you have enjoyed over the last two years) and some dishes we are working on at the moment. Places will still be limited to 12 so watch this space for the next date!

I am Soooooooooo! looking forward to cooking for our guests on Saturday!

It seems only yesterday that we had our last supper club but it was nearly three weeks ago! We usually only host them once  a month but felt so awful at letting people down. So we are doing an extra date this month.

I am really looking forward to cooking for our guests as I  rather over-dosed on sitting around and doing nothing last week!

Why?

Because I watched 5 Days of the first Test between England and India at Lords!!

I have been a cricket fan for umpteen years and have seen many matches and sometimes wished I was there for a different day, but this was a first.

And what a fantastic result! I won’t divulge my loyalties just in case some of my guests cancel for Saturday!

So shopping tomorrow and prepping on Friday – really looking forward to it.

Saturday night at Joginder’s Supperclub….

Sorry a thousand times to Ma Rani and all of you readers for taking so long to write-up this blog post. No excuse,  just the world of cricket is very busy and I am consumed by it at the moment – in a good way though 😉

We had a great time last Saturday and we hope our guests did as well. The table was full and once again with a really lovely mix of people. The lovely Jarina who we met at Clandestinos Supperclub came with her brother. Anna, Patricia and Anj made up the Tufnell Park contingent, our friend Anne came all the way from Nofolk with her hubby Del and their lovely friends. We also welcomed friends Britta and Uli from Berlin to the table. Their daughter Nelly is my god-daughter and her obsession at the moment is Star Wars. She watched Return of the Jedi twice back to back when she stayed with us. Dedication. George Lucas would be proud.

We served Pork as a starter for the first time. A new creation from the kitchen.

For the Pork Masala we seasoned the sausage meat with spices and created small patties. Browned off over a heat and then oven cooked in Joginder’s Masala Sauce.

Ma Rani and I are spending more time digging around in antique shops (and John Lewis) for bits of crockery, cutlery and decoration for the supperclub. We have quite a collection now and I love to mix and match and at least half of my day is spent creating a table. I say creating because it really is when you are holding a supper party. I am obsessed with candles and even in my own home my poor other half always has the main light in the living turned off around him and his light replaced with candles. So when I am let loose on my parents table for the supperclub I don’t hold back. Obviously this is my own opinion..but comments warmly appreciated as to the extent of the table decoration.

Back to the food!

We served our very popular Fish Masala with Stuffed Paratha which does always go down well. I absolutely love this dish!

Just add a piece of Stuffed Paratha et Voila!

Vegetable Sabji

Joginder’s Murgh Masala, Chole Daal and Vegetable Sabji were served along with other dishes for the main part of the supper.

After nearly two years of running our little supperclub in good old Tufnell Park, Ma Rani and I really do work well together. We always have done, but once a month we spend two days together prepping, cooking, hosting and enjoying each other’s company.

For dessert we served a seasonal fruit platter with a Minted Gur.

Minted Gur

Gur is a hardened brown sugar which is crushed down to crumb consistency. It comes from the liquid from sugar which is initially pressed at first picking. You can buy it in all good world food stores or from Southall (not the only place to buy your produce I know!) Very useful tip – don’t attempt to use your blender! Put in the elbow grease and use a pestal and mortar to save your blender blades!

You then add what ever you like to it. It is lovely with cinnamon and a very nice topping for ginger cake.

Your support is much appreciated and we are very happy that people find us an ideal Saturday night! No kick out time and you never know who you will meet or the friends you might make……

All Systems Go!

It’s all systems go for this Saturday as we begin prepping! We hope you enjoy the menu and the evening. We are delighted to be welcoming new faces and old friends to the table. I haven’t blogged for a while, so while I grab a quick lunch break at work I thought I would say hello. Working at Lords Cricket Ground, you’d think the cricket would be in full flow but the good old british weather always puts a dampner on things – oh the wit! Do you like what I did there….

So as I shut down my computer and head over to the hub to help Ma Rani I hope the game between Middlesex and Surrey this evening goes ahead (I’m sure it will, us cricket fans stick with a game, even if the hail stones keep coming. There is always a glimmer of sunshine on the horizon)

Another date for your culinary diary…

Looking forward to cooking for you all on the 9th July! We are still creating the menu, and because we cook and test the dishes on our family and friends it is by a  process of improvement (and sometimes elimination) that we come to the winning menu – now I sound like I’m pitching a game show to you – sorry!

Anyway we promise to tantalize your taste buds and leave you feeling nicely full with a new insight into North Indian food. We have a new date, Saturday 30th July so please do take a look at our ‘contact us & how to book page’. We look forward to cooking for you soon, see you at the table.

Joginder’s always caters for all!

We had a fantastic mix of guests around our dining club last weekend.

The Spicy Paneer, Capsicum and Tomato kebab with the Gobi paratha went down really well but it was  tough deciding whether to serve one or two – in the end one was enough as there was so much more food to follow!

This was followed by some very successful tangy Spinach, Onion and  Prawn pakoras – a dish Bejee cooked for us as a tea-time treat!

As a Punjabi I find it really hard to serve ‘a portion of food’ ! I was brought up with dishes of food being put on the table and we helped ourselves to as much as we wanted of our favourites ( in my case Chicken and Daal ) or as little  of the ones we had to eat because they were good for us ( Spinach and Cauliflower!)

I have to say that I was about 10 years old at this stage and my fondness of Punjabi non -meat food grew over the years, particularly when we came to live in the UK.  As a teenager I decided that I would be a vegetarian and my poor Ma Joginder ( Bejee) had to re-invent a whole range of dishes from her beloved Punjab. My class at Gravesend Grammer School for Girl’s became my ‘best friends’ whenever my lunch box had ‘something smelling nice’!

The ‘Green Bean, Chickpeas and Potato sabji was also a great hit last Saturday. Years ago Ma Joginder used to grow the beans and potatoes in her little garden in Northfleet ( which by the way is Ebsfleet International Station now, and whenever  I travel on Eurostar I can actually see the back of the street and park where I used to live and play with my brothers  in the mid- 60’s) !

So, we hope you enjoy the  photos and in the meantime  we are busy working on our menu for the 9th July!
